I know this is a little late, but that ebike connector is an IEC C21.
I see where you have a couple of your MOSFETs in black foam — be careful with that stuff! In time, it degrades, and will eventually corrode the leads of any device inserted into it. Not sure what the exact reaction is, but I've seen it and also seen it mentioned online.
Regarding those XT60 connectors, I don't know where they came from, I've never seen them except in your videos. Are you familiar with Anderson Powerpole connectors? You can get those in various sizes and some of the bigger ones can handle a LOT of amps! The smallest size, which I'm expecting a shipment of here shortly, can be fitted with different connectors in the same shells and are rated at 15A/30A/45A. The connectors are all the same, just the bit that holds your wire is different. These also have the advantage of being genderless, which is why I'm using them for the DC power distribution system that I'm in the process of putting together.

Rdson isn't the only electrical characteristic that is an important consideration for most switching applications.
Gate charge is very important for determining switching losses at any switching frequency in the kilohertz range, and unless you have some beefy 6A or 10A mosfet drivers, any mosfet with a gate switching charge (miller charge plus gate to source charge from threshold voltage to miller plateau) of more than 70nC will generally have greater switching losses than conduction losses.
I'm guessing that the sudden appearance of low rdsOn FETS is caused by electric car development. In the same way that white LEDs became cheap when the Indian government bought billions to save power.
